2 pounds stew meat
1 cup water
4 sliced carrots
4 cloves garlic, chopped
2 tsp salt
2 T beef bouillon granules
1 pumpkin (10-12 pounds)
3 T oil
3 potatoes, cut into 1" cubes
1 green pepper, cut into 1/2" pieces
1 medium onion, chopped
1/2 tsp pepper
1 14 1/2 ounce can tomatoes

In large stew pot, brown meat in 2 T oil. Add water, potatoes, carrots, green pepper, garlic, onion, salt and pepper. Cover and simmer for 2 hours. Stir in bouillon and tomatoes.

Wash pumpkin. Cut 6-8" circle on top - clean out seeds. Place in shallow baking dish. Spoon stew into pumpkin. Replace top and brush with remaining oil. Bake at 325 degrees for 2 hours or until pumpkin is tender. Serve stew with cooked pumpkin.
