"As I ate the oysters with their strong taste of the sea and their faint metallic taste that the cold white wine washed away, leaving only the sea taste and the succulent texture, and as I drank their cold liquid from each shell and washed it down with the crisp taste of the wine, I lost the empty feeling and began to be happy, and to make plans."--Ernest Hemingway

Cook ham on very low heat (about 250) in large, covered pot with water to cover bottom half of ham. Cook about 10 hours. Meat should fall off the bone when done. Reserve about 2 cups juice. Discard remaining juice and bones. Pull ham apart into strings and discard any additional fat.

Combine mustard, brown sugar and onions. If necessary, add ham juice until sauce is smooth but still thick. Add sauce to pulled meat and keep warm. Serve by itself or on rolls.
