1 T butter, melted
1/4 tsp salt
1 egg
1/2 tsp vanilla
1 cup flour
1-2 T sugar
1 cup milk

Directions:
Directions:
Place the flour, salt, and sugar in a bowl. Add the egg and milk and beat with the egg beater until well mixed. Add the margarine and stir well. Heat a non-stick frying pan. Brush the bottom and sides with butter and pour about 1/2 cup of batter into the pan. Swish it around to cover the bottom of the pan. Let it cook until lightly brown. Using a spatula, turn the pancake over and lightly brown it on the other side. Remove from pan and stack on a plate until all the dough is cooked. These can be served with butter and maple syrup, sugar and cinnamon, jam, ice cream, or whatever filling sounds good. This recipe is from the Norwegian Mission Cookbook, 1980.
