2 Tbsp cooking oil
1 onion chopped
2 cups long grain rice
1 can tomatoes
garlic salt
black pepper
1 quart of water

Directions:
Directions:
Heat cooking oil in heavy skillet. Chop onion for later. Brown 2 cups of uncooked long grain rice in hot oil, stirring constantly. When rice is browned, add onion and saute until onion is done. Cover rice and onions with about 1 quart of water and simmer until rice is tender. Add can of tomatoes and season with garlic salt and black pepper. Simmer and stir often until desired consistency is obtained.
Spanish Rice should be served, piping hot and slightly moist.
