Ingredients: 2 cans of green jackfruit in water or brine 1 medium onion, sliced (1/4") 4 cloves garlic 1 tbsp each of cumin and coriander powders. 1 tsp turmeric, chili powder, cayenne powder, and black pepper. (adjust to taste) 1 or more fresh chili peppers (to taste, cayenne or jalapeno) Salt to taste Sugar to taste 1 ½ cups vegetable broth or vegetable bouillon Vegan BBQ sauce (Southern spicy style) 1 spoonful coarse mustard 1 tbsp neutral oil (canola) 1/2 tsp liquid smoke Broth can partially be replaced by beer for a richer flavor. A shot of whiskey can be added for a little zip as well.

Directions:1. Preheat oven to 350 ºF. 2. Drain and squeeze water/brine out of jackfruit. Remove seeds. 3. Heat a dutch oven or heavy bottomed pan at medium high heat. 4. Sautée onions for 3 minutes on high heat. 5. Add chili pepper and spices and sautée for 2 more minutes. 6. Add garlic, cook 30 seconds. 7. Add jackfruit, sautée 5 minutes. 8. Add broth and and mustard, simmer 15-20 minutes (until thickened). 9. Taste and add salt as needed. 10. Transfer to baking dish. 11. Add BBQ sauce over top and bake for 20-30 minutes or until it reaches the dryness you want. 12. Taste and add sugar over top if it is not sweet enough. Broil briefly to caramelize sugar.
Serve in a sandwich with creamy coleslaw or with traditional fixin's (macaroni and cheese, coleslaw, baked beans, etc.) |
