Ingredients:  
Ingredients:  
1 medium eggplant
cup butter or margrine
1 cup bread crumbs
medium onion chopped
2 eggs, well beaten
salt & pepper
1 T. sage or poultry seasoning

Directions:
Directions:
Peel eggplant & slice in. thick. Cook in salted water until tender. Drain & mash. Add remaining ingredients & mix thoroughly. Pour into greased baking dish & bake at 400 until browned.
