6 ounces (1½ cups) raspberries*
3 tablespoons fine sugar, or more to taste
¼ teaspoon lemon juice
1 pint vanilla ice cream
1 pound peaches, peeled, pitted, and cut into ¼-inch slices

*substitute frozen raspberries. Measure the same amount of frozen berries, let them thaw, and proceed with the recipe.

In a food processor or blender, puree the raspberries. Strain through a medium or fine sieve and press the puree firmly to get all the fruit. Stir in the sugar and lemon juice and let sit for about 20 minutes to dissolve the sugar.

To serve, scoop the ice cream into sundae glasses or bowls. Top with the peaches and pour on the raspberry sauce.
