3 cups rice cooked
2 1/2 cups diced, cooked chicken
1 cup diced celery
1/4 cup margarine
1/4 cup flour
1 12 ounce can evaporated milk
1 cup chicken broth
1/2 cup water
3/4 cup mayonnaise
1 1/2 tsp salt
2/3 cup grated cheese
1 small package toasted almonds

Directions:
Directions:
In a saucepan melt margarine and blend in flour. Add milk, broth and a little water. Cook quickly - stirring constantly until mixture thickens and bubbles. Remove from heat. Add rice, chicken, and celery. Add mayonnaise and mix thoroughly. Pour into a greased 2 quart casserole dish. If a little too thick, thin with broth. Bake covered at 350 degrees for 40 minutes. Top with almonds and cheese and return to oven until cheese melts.
