Salad:

2 bags Riced Cauliflower, defrosted or frozen cauliflower defrosted and blitz into fine pieces in a food processor
1/2 red pepper, diced
1/2 yellow pepper, diced
1/2 orange pepper, diced
1/2 purple onion, diced
5 scallions, chopped

Dressing:

1 and 1/2 teaspoons salt
6 tablespoons sugar
6 tablespoons oil
1/2 cup vinegar
