1/4 c. poppy seeds
1/4 c. milk
18 1/2 oz. lemon cake mix
4 oz. instant vanilla pudding
4 eggs
1/2 c. vegetable oil
1 c. warm water

Glaze:
1/3 c. lemon juice
1/3 c. sugar
grated rind of 2 lemons

Directions:

Soak poppy seeds in milk for at least 1 hour.
Beat together cake mix, pudding, eggs and oil.
Add poppy seed mixture.

Bake in a greased tube or bundt pan at 350º for apprx. 1 hour.

Meanwhile, combine sugar and lemon juice. Microwave mixture for 30 seconds. Add lemon rind to glaze.

Allow cake to cool for 20 minutes. Turn cake out onto a platter and while still warm, spoon glaze mixture over cake.

OPTIONAL: Cream together 3 Tbsp. butter, 1 c. icing sugar and enough lemon juice to thin mixture. Drizzle over glazed cake.
