6 cups water (really warm)
2/3 cups oil
2 T gluten
2 T instant yeast
2 T salt
2/3 cups honey
2 T lemon juice
15-16 cups flour (1/2 white)

Directions:
Directions:
Place 8 cups flour (whole wheat), gluten, yeast and mix up. Add lemon juice and water. Let sponge for 15 to 20 minutes. Add salt, honey, oil and the rest of the flour (white) gradually. Knead for a full 10 minutes. Cover and let rise until double in bulk. Make into loaves and let rise. Bake 30 minutes (depending on size) at 350 degrees.
