Directions:
Add softened yeast and stir. Add 3 more cups flour and stir well. Leave spoon in soft dough and allow to rest 10 minutes. Stir down and let rest 10 more minutes. Repeat for a total of 60 minutes. Turn dough onto floured board and knead only enough to coat with flour so it can be handled easily. Divide in two and roll out to 9x12 rectangle. Roll up like jellyroll. Put on greased cookie sheet with seam side down. Let rise 30 minutes. With a sharp knife slash top and brush with a thin layer of beaten egg. Sprinkle with sesame seeds or poppy seed, if desired. Bake at 400 degrees for 20-25 minutes.
