lbs of Mushrooms
3 T Butter
3 T Flour
4 C Scalded Milk (not boiling)
1 Egg Yolk
C Sherry

Directions:
Directions:
Slice the caps of mushrooms and slice the stems. saute in 3 T butter until lightly browned. sprinkle with 3 T flour and cook over low heat for 4 minutes. Add 4 cups of milk and simmer soup for 10 minutes.

Mix 1 egg yolk lightly beaten with c of Sherry and add to soup.

Add salt and pepper to taste - cook 2 minuted longer.
