6 egg yolks/3T sugar
6 egg whites/6T sugar
⅔ C walnuts finely ground
1 tsp vanilla
⅔ C graham crackers finely ground
¼ C flour
¼ C melted butter - cooled

Filling:
1 C butter
1 C powdered sugar
2 T rum
½ lemon rind grated
½ tsp. cinnamon
1 C walnuts ground

Frosting:
1 C powdered sugar sifted
3 T coca sifted
2 T melted butter
Enough hot water to make it spreadable.

In a large bowl beat 6 egg whites with 6 T sugar. In a separate bowl beat 6 eggs yolks with 3 T sugar. Into the yolks fold ⅔ Cups of walnuts finely ground and 1 tsp vanilla. Carefully fold in the whites and sprinkle with ⅔ C finely ground graham crackers and a ¼ cup of flour.

Then pour a ¼ cup of melted butter -cooled- over the batter and keep folding until all is combined. Divide between three well buttered 9" cake pans.

Bake at 375º oven for 25 minutes. The cake should be moist. Cool for a least 3 hours.

Filling:
Cream 1 cup of butter with powdered sugar. Add rum, grated lemon, cinnamon and ground walnuts.

Frosting:
Combine all ingredients, frost top and sides.
