Spinach meatballs… recipe follows
1 large chopped onion
1 (1lb.) can stewed tomatoes
1 pkg. Frozen green beans
1 cup each sliced carrots and celery
7 cups water 7 beef bouillon cubes
˝ tsp. Each oregano and basil leaves
1 cup macaroni

Spinach Meatballs: Squeeze liquid from 1 (10-oz.) pkg. frozen chopped spinach that has been thawed. Mix with 1 ˝ lb. Lean ground beef, 1 clove garlic minced, 1/3 cup bread crumbs, 1 beaten eggs, 1 tsp. salt and dash of pepper. Shape into 1inch balls. Brown meatballs and set aside.
Sauté onion in small amount oil, stir in water, bouillon cubes, tomatoes, bean, oregano and basil. Cover and simmer for 10 minutes. Add carrots and celery, simmer 10 more minutes. Stir in macaroni, simmer and add meatballs.
