1 bunch of rapini, trimmed 1 inch from ends. Cut stem in 2 inch pieces and cut remaining greens in half
1 T olive oil
1 large onion diced
2 cloves garlic minced
8 c. chicken broth
2 cooked Italian sausages, sliced
19 oz. can white kidney beans, drained and rinsed
1 ½ c. uncooked orecchiette or other small pasta

Boil a large a pot water. Cook rapini in 2 batches for 1 and a half minutes and then drain and rinse with cold water
Cook pasta in salted water until al dente.
Saute onion in oil until soft. Add garlic and cook one minute. Add broth and sausage and cook to simmer. Add beans and pasta and season to taste with s&p. Ladle into bowls and sprinkle with grated parm.

This is a healthy and hearty soup for a winter evening. If you like spice, use Hot Italian sausage.
