¼ Cup vegetable oil
¼ Cup flour
1 Cup coarsely chopped onions
¾ Cup coarsely chopped celery
½ Cup coarsely chopped sweet green pepper
4 Cups water
1 tsp. salt
⅛ to ¼ tsp. black pepper⅛
⅛ to ¼ tsp. ground cayenne pepper
¼ Cup finely chopped green onion
¼ Cup finely chopped parsley
1 can or 1 small pkg. frozen okra
1 can Cajun style tomatoes
2-3 drops Tabasco

Directions:

Stir flour into the oil in a large pot. Cook stirring constantly, to make a "dark" brown roux. Add onions, celery, and green pepper. Cook stirring until onions are tender. Carefully stir in water. Add salt, black and cayenne pepper, okra, and tomatoes. Bring to boiling, reduce heat and simmer for about 45 minutes.
You can add just about any meat. Some suggestions: chicken, catfish, oysters, sausage, shrimp, turkey. About 1 pound of meat is sufficent, but you can add any amount of anything you may have. The meats such as chicken and sausage should be added after tomatoes. The shrimp should be added at the end with the green onions and parsely. Cook 5 minues. Serve over rice.
