2 tablespoons melted butter or olive oil
2 cloves garlic, minced
1 zucchini, about 8 oz, sliced and quartered
1 yellow squash, about 8 oz, sliced and quartered
4 oz cherry tomatoes, halved
A good pinch of salt
Ground black pepper
1 teaspoon chopped Italian flat leaft parsley leaves
Squirts of lemon juice, optional

Directions:
Directions:
Heat up a skillet on low to medium heat. Add the melted butter and saute the garlic until slighly browned. Add the zucchini, squash, cherry tomatoes and season with salt and black pepper. Lightly toss and saute for 2-3 minutes. Add the parsley and squirts of lemon juice (if using). You don’t want to overcook the squash as you want to retain the crunch. Stir to combine well, dish out and serve immediately.
