For puffs:
1-1/2 cups all purpose flour
1/2 cup sugar
1-1/2 teaspoons baking powder
1/4 teaspoon nutmeg
1/8 teaspoon salt
1 egg
1/2 cup milk
1/3 cup butter, melted

For topping:
1/4 cup sugar
1/2 teaspoon cinnamon
1/4 cup melted butter

For Puffs:
Preheat oven to 350º. In a mixing bowl, combine the flour, sugar, baking powder, nutmeg and salt. Make a well in the center of the dry ingredients. Beat the egg, milk, and 1/3 cup melted butter together and add to the flour mixture. Stir until just moistened.

Spray muffin tin cups. Fill cups 2/3 full with batter. Bake for 20-25 minutes or until the muffins are a nice brown.

For Topping:
In a shallow bowl, combine the 1/4 cup sugar and the cinnamon. Dip the tops of the muffins into the 1/4 cup melted butter, then into the cinnamon-sugar mixture to coat. Serve while still hot.

Makes 12 large or 24 miniature muffins.
