1-2 c. roasted, salted cashew halves
1 c. sugar
½ c. light corn syrup
2 tsp. butter
1 tsp. vanilla
1 tsp. baking soda

Directions:
Directions:
In a 2 qt. microwave-safe bowl, stir together nuts, sugar, and corn syrup. Microwave on high for about 6 minutes, stirring well half-way through (light brown).
Meanwhile, grease a cookie sheet well with butter.
Remove the nut mixture from oven, stir in butter and vanilla. Continue to microwave on high for 1½-2 more minutes.
Take out, then add baking soda and stir until light and foamy. Pour onto cookie sheet.
