8 Ripe, firm tomatoes, medium sized
1 Red onion, very thinly sliced into rings
DRESSING
1 1/2 t Dijon mustard
1 Egg yolk
3 Garlic cloves, chopped
2 T Onion, minced
4 t Red wine vinegar
1/4 t Salt
Pepper, freshly ground, to taste
1/4 C Olive oil

Directions:
Directions:
1. Slice tomatoes in 1/4 inch rounds and place attractively on 4 salad plates. Place red onion evenly over the tomatoes on
the 4 plates.

DRESSING
1. Mix the mustard, egg yolk, garlic and onion in a bowl. Pour this mixture into a blender and blend for 1 minute.
2. Add the vinegar, salt and pepper. Place this mixture in a mixing bowl and drizzle in the oil in a fine stream, whisking all the
time until the dressing is well blended. Adjust the seasonings to taste.
3. Pour over tomatoes and serve.
