3 eggs
1 cup canola/vegetable oil
2 1/2 cups sugar
3 tsp vanilla
3 cups flour
1/2 cup nuts (optional)
1 tsp salt
1tsp baking soda
3 tsp cinnamon
1/4 tsp baking powder
2 cups peeled, grated zucchini

Directions:
Directions:
1. Beat eggs in large mixing bowl
2. Add oil, sugar, vanilla
3. Stir in zucchini and mix well
4. In a separate mixing bowl, combine flour, salt, baking powder, baking soda, and cinnamon.
5. Stir into wet mixture
6. Bake in greased loaf pans (2) at 325 degrees for 1 hour

Let cool before slicing. Tastes better if you wrap and store in refrigerator until the next day. Freezes well.
