2 cups sugar
2/3 cup milk
One cup chopped dates
Pinch of salt
One cup chopped nuts

Directions:
Directions:
Mix the sugar, salt and milk. Cook for 3 minutes. Add the chopped dates. Cook to the soft ball stage on a candy thermometer of 234-238º.

Add the nuts and beat until stiff. Spread on a damp cloth and knead until smooth and pliable. Form into a roll and wrap in the damp cloth. Let set at least two hours before slicing.

This makes about 24 pieces depending on the size of your roll and the thickness of the slices.
