8 Ears of Corn
1 Rotisserie Chicken, pulled apart into small pieces or 3 Large chicken breasts cut into small pieces
1 Large Onion, finely chopped
1 Yellow Bell Pepper, chopped
1 Large Tomato, chopped
1 T. Salt
1 T. Sugar
1½ t. Cajun Spice
Milk as needed
2 T. Flour
½ cup Chicken Stock

Cut corn off cob and scrape ears with back of knife to obtain milky pulp.

In heavy aluminum pot, brown the chicken in oil until cooked.

Add corn, onions, and rest of ingredients to the pot.

Stir frequently and cook over medium to low heat for 45 minutes.

Add milk, chicken stock and flour and cook for 15 more minutes.
