2 lbs grouper or salmon fillets (skinless)
juice of 2 limes
½ teaspoon salt
½ teaspoon black pepper
½ teaspoon minced garlic
1 cup chopped celery
1 tablespoon fresh parsley, finely chopped
2 cups water
1 tablespoon fresh thyme, finely chopped
½ lb potato, peeled and thickly sliced or cubed ( about 2 medium red skinned)
1 - 2 tablespoon butter
¼ teaspoon hot chili pepper (finely chopped) OR less if desired. Add sparingly to taste.

1. Placed the fish in a glass dish and add lime juice. Sprinkle with salt and pepper.

2. Pour 2 cups of water into a pot and add onions, garlic, celery, parsley, thyme, potatoes, butter and chili pepper. bring to a boil and cook for about 10 minutes until potatoes are almost done. (Add more water if necessary.)

3. Add the fish with the marinade juices, reduce heat to low and simmer for about 10 minutes, or until the fish is cooked through and starting to flake.

4. Taste and adjust for salt and pepper. Serve hot with grits or Johnny Cake.




Tip. While cooking fish, Turn on stove exhaust fan and simmer a half cup of Downy on back burner. This will help to eliminate the fish odor in the house.
