2 dozen hard boiled eggs
½ cup minced onion

Dressing:
1 cup Miracle Whip
2 Tbsp. sweet pickle relish
1½ Tbsp. French's Yellow Mustard
1 tsp. sugar
Salt and Pepper to taste

Method: Put eggs in a single layer in pot. Cover with water 1 inch over top of eggs; add 1 Tbsp. of vinegar. Bring to a boil, shut off burner, cover with lid and leave on burner 15 minutes. Rinse in cold water and put in fridge overnight. This method prevents discoloring around yolks. Crack shell by rolling on counter; peel under gently running cold water. Put a few at a time in a round bottom bowl and chop with a pastry blender.

Mix all the dressing ingredients together and fold into the chopped eggs and onions.
