1 pound extra-sharp cheddar cheese, finely grated
1/2 pound pepper-jack cheese, finely grated
1/2 cup Bleu cheese, crumbled
1 Tablespoon cayenne pepper
17-ounce jar diced pimento, not drained
1/2 to 1 cup Duke's mayonnaise

Directions:
Directions:
Using a 4-sided box grater, grate block cheese on the finest grade side.
In large mixing bowl, toss together the cheese and crumbled bleu cheese. Sprinkle cayenne over the top of the cheeses. Add pimentos, juice and all. Add mayonnaise a little bit at a time. You want the dip to bind, but not become runny or mushy.
