Ingredients: 2½ lbs chicken pieces (stew sized) ¼ lime juice 1 tablespoon vegetable oil 4 garlic cloves peeled and mashed 1 teaspoon seasoned salt ¼ cup honey ½ cup rice vinegar 1 teaspoon black pepper 1 teaspoon minced garlic ⅓ cup light brown sugar ½ cup water 1 teaspoon minced ginger (or ginger powder) 1 cup low sodium chicken broth ¼ cup reduced sodium soy sauce 2 scallions thinly sliced for garnish.

Directions:1. Wash the chicken with lime juice and pour off excess fluid. Season chicken with seasoned salt and black pepper.
2. In a large skillet heat oil over medium high heat. Add chicken and cook until golden brown all over and cooked through. Transfer to a plate and set aside.
3. Add garlic to skillet until golden brown. Transfer to plate of chicken.
4. Carefully pour ½ cup of water scraping down the brown bits. Whisk in brown sugar and honey until dissolved. Cook until the mixture is deep amber color about 4 minutes. Carefully add rice vinegar and stir to dissolve.
5. Add ginger, minced garlic, broth and soy sauce. Bring cooking liquid to boil and whisk occasionally. This takes about 10 minutes. This is the glaze for the chicken.
6. Once glaze is ready, turn heat to medium low and return chicken to the pan until cooked through 20 - 25 minutes. Serve over rice and garnish with scallions or green onions if desired.
