3/4 cup unsalted butter, softened
1 cup light brown sugar
1 egg
1 teaspoon vanilla extract
1 teaspoon peppermint extract
2 cups all-purpose flour
1/3 cup cocoa powder
2 teaspoons corn starch
1 teaspoon baking soda
1/2 teaspoon salt
12 mini peppermint candy canes, crushed

Directions:

1. Preheat oven to 350º
2. in a large bowl, combine butter, sugar, eggs, vanilla, peppermint; beat using an electric mixer on high speed until light
and fluffy.
3. In another bowl, sift flour, cocoa powder, cornstarch, baking soda, salt
4. Gradually stir the flour mixture into the butter mixture until well blended
5. Add crushed candy canes into the dough, mix with a spatula until everything is combined
6. Line baking sheet with parchment paper
7. Spoon out 1 tablespoon of the cookie dough onto the baking sheet and place cookies 2 inches apart
8. Bake 8 minutes
9. Cook cookies on a wired rack.
