Beef and Marinade
• 2 lb London Broil / skirt / flank / hanger steak (Note 1)
• 2 cups apple juice
• ½ cup light soy sauce
• 5 garlic cloves , minced
• ½ brown onion
• 1 tsp sesame oil
• 1 tsp freshly ground black pepper

Ginger Spring Onion Sauce
• 8 oz / 250 g scallions (green onions), thinly sliced
• 5 g fresh ginger , finely chopped or minced
• 4 tbsp grape seed oil (or another neutral oil)
• 1½ tsp light soy sauce
• ¾ tsp sherry vinegar
• ¾ tsp salt (adjust to taste)

Ssam Sauce
• 1 tbsp ssamjang (Korean fermented bean-and- chili paste, available in many Asian stores)
• ½ tbsp kochujang (Korean chili paste, available in many Asian stores)
• ¼ cup sherry vinegar
• ¼ cup grape seed oil (or another neutral oil)

To Serve
• 3 small heads of Bib Lettuce , leaves removed, washed and dried

• Small flour tortillas

1. Combine Beef with Marinade and marinate at least overnight, up to 24 hours.
2. Prior to grilling, make the Ssam Sauce by combining the ingredients and mixing well until smooth.
3. Make the Ginger Spring Onion Sauce by combining the ingredients and mixing to combine.
4. Remove beef from marinade, ½ hour prior to grilling. Preheat outdoor grill or heavy based skillet
on stove on very high heat. You want it to be screaming hot. Cook the beef to your liking, medium
rare is recommended.
5. When done, remove from heat, cover loosely with foil and let them rest for 5 to 10 minutes.
6. Slice the beef into 0.5cm / 0.2 inch thick slices, against the grain.
7. Serve with tortillas or lettuce, Ginger Spring Onion Sauce and Ssam Sauce on the side.
8. To eat, place a piece of beef in a tortilla or lettuce leaf, top with some of each sauce, then fold over
lettuce, eat and be happy.

Recipe Notes
You can substitute the London Broil with other cuts of beef (skirt steak, etc.) but it is usually moderately priced and if sliced thin, across the grain makes an excellent dish.
