1 tablespoon olive oil
4 boneless pork chops
¼ cup chopped onions
¼ cup apricot preserves
1 tablespoon low sodium soy sauce
¼ teaspoon Dijon mustard
2 teaspoon minced garlic
¼ teaspoon seasoned salt (or mixed seasoning)
¼ cup chopped green onions
¼ cup red sweet pepper
¼ green pepper
Optional: ¼ cup cilantro

Directions:
Directions:
Season pork chops with seasoned salt or mixed seasoning
Let sit for 30 minutes
Heat large skillet with olive oil
Add pork chops to pan. Cook cook on medium heat 6 minutes on each side until done.
Remove from pan and keep war.

Add chopped onions and red pepper saute for 4 minutes
Stir in apricot preserves, soy sauce, garlic, and Dijon mustard
Cook for 3 minutes until thickened
Add pork chops. Turn to coat.
Sprinkle with green pepper or cilantro

Cook on low heat for about 20 minutes

Serve with baked potato, rice or sweet potato fries and a vegetable medley.
