2 Tbsp Butter
2 Tbsp Olive Oil
2 Med. Onions (finely chopped)
3-4 cloves of Garlic (finely chopped)
3/4 Cup Flour
1/2 tsp Salt
Dash Pepper
Boneless Cod Fillets
4 Med. Ripe Tomatoes
1 Lemon
2 Tbsp Parsley

Directions:
Directions:
Pre-heat oven to 200 degrees to keep a platter warm

Melt the butter/oil and add onions and garlic. Sautee for 7-8 mins. Use a slotted spoon and spread garlic/onions over platter.

Place flour, salt and pepper into a bag. Add the cod pieces to coat.

Once the cod is coated fry in the same frying pan as onion and garlic. Once all the cod has been fried lay it on the warmed platter on top of the onion and garlic. Heat the tomatoes, that has been quartered and seeded. and lay over the fish. Quarter a lemon and lay next to fish and then sprinkle with parsley.
