2 tbsp. Butter
2 tbsp. Olive Oil
2 medium Onions, finely chopped
3-4 cloves of Garlic, finely chopped
¾ c. Flour
½ tsp. Salt
Dash Pepper
Boneless Cod Fillets
4 medium Ripe Tomatoes, quartered and deseeded
1 Lemon
2 tbsp. Parsley

Preheat oven to 200ºF to keep a platter warm.

Melt the butter/oil and add onions and garlic. Saute for 7-8 minutes. Use a slotted spoon and spread garlic/onions over platter.

Place flour, salt and pepper into a bag. Add the cod pieces to coat.

Once the cod is coated fry in the same frying pan as onion and garlic. Once all the cod has been fried lay it on the warmed platter on top of the onion and garlic. Heat the tomatoes, and lay over the fish. Quarter the lemon and lay next to fish and then sprinkle with parsley.
