Ingredients: 7 lb boneless prime rib roast 1 c butter, room temperature 7 garlic cloves, minced 2 Tbsp dried rosemary 1 tsp thyme 2 Tbsp salt 1 Tbsp pepper 2 T oil 2 T flour 2 c chicken broth

Directions:Preheat oven to 500 F.
In a bowl, mix butter with garlic and seasonings. Spread over rib roast, nice and thick. Place on roasting tray. Bake 5 minutes for every 1 lb of roast (35 minutes for a 7 lb roast). Then turn oven off and leave roast in for 2 hours - do NOT open oven. Check temperature - it should be 130 F for medium rare.
Remove roast to cutting board to rest. Slice into 1 inch thick steaks.
Pour drippings into skillet over medium heat. Add 2 tablespoons oil and 2 tablespoons of flour - whisk. Add 2 cup chicken broth and bring to simmer, stirring until thickened. Serve gravy with roast. |
