4 sliced bacon
4 c romaine lettuce, chopped
2 c sliced mushrooms
1 c red onion, diced*
2 tomatoes, chopped
2 c carrot, shredded
1 10-oz package frozen peas, thawed
1/2 c mayo
1/2 c sour cream
2 Tbsp sugar
1 1/2 c cheddar cheese, shredded
chives

*substitute chopped celery for onion

Directions:

In a skillet, fry bacon until crispy. Drain on a paper towel. Crumble and set aside.

In a large glass bowl, layer lettuce, mushrooms, onion/celery, tomatoes, carrots and peas. Mix mayo, sour cream and sugar. Spread over veggies. Top with crumbled bacon, cheese and chives.

Cover and place in fridge until dinner.
