2 packages frozen chopped spinach
1/4 cup chopped onion
1/2 tsp. black pepper
2/3 tsp. garlic powder
salt to taste
red pepper to taste
4 T. butter
1/2 cup evaporated milk
3/4 tsp. celery salt
8 oz. jalapeno cheese
1 T. Worcesteshire
Tabasco to taste

Directions:
Directions:
Cook spinach as directed. Drain very well in a colander. Save 1/4 cup spinach juice. Melt butter and saute onions until clear. Add flour stirring until smooth - do not brown. Reduce heat, add milk and cheese and cook until cheese melts. Add drained spinach and stir. Add spices and adjust consistency with reserved spinach juice. Serve with crackers or in pre-baked pastry shells.
