1 lb. ground meat
½ tsp salt
½ tsp pepper
1 can Rotel tomatoes
1 4 oz. can chopped chilies (optional)
2 cups shredded cheese
7 or 8 flour tortillas (8 inch)
1 19 oz can green chili enchilada sauce

Directions:
Directions:
Brown ground meat with salt & pepper. Drain and return to pan. Add Rotel tomatoes and chilies and simmer for about 8 minutes. Preheat oven to 350º. In each tortilla place about ⅓ cup of meat mixture along with a small amount of cheese. Roll up and put into a baking dish. I use a 13x9x2 casserole dish. Once all enchiladas are in the dish, pour the can of sauce over the entire dish, spreading to cover all tortillas. Sprinkle the remaining cheese (or more, if you like) over the sauce. Bake for approximately 45 minutes or until bubbling hot.

Chicken version:
2 large cans of white chicken breast..drained.
Drain can of Rotelle and chilies and mix with chicken. Follow directions above.
Baking time about 1 hour.
