1 gallon tomatoes, peeled and diced
2 mild Bell or Banana peppers diced
2 large onions diced
3/4 cup cider vinegar
2 tbsp salt
2 tbsp sugar
very small amount of chopped fresh cilantro, if desired

Directions:

Cook all ingredients in large stock pot till a rolling boil. Boil 10 to 15 minutes stirring often. Pour sauce into very clean canning jars and cover with sterilized lids. Boil jars for 10 minutes in a hot water bath to seal lids. The longer the jars stay sealed the hotter in flavor it gets. Wait at last two weeks before using for best flavor. Sealed jars can be kept for a year. If you have some that do not seal, keep in refrigerator and can use after 2 weeks.
