Karen Lu

2 cups of unbleached flour (I usually do half white, half whole wheat)
1/2 cup white sugar
1 tsp baking soda
1 tsp baking powder
1 tsp salt

2 eggs beaten
3 mashed bananas (use ripe bananas... I always have ones in the freezer)
3/4 cup unsweetened apple sauce
3 tbsp milk
1 tsp pure vanilla

Combine dry ingredients and set aside.
Combine wet ingredients in mixing bowl
Add dry ingredients to wet ingredients (add chocolate chips, cranberries, nuts or anything else fun)
Pour into a greased loaf pan
Bake at 350 degrees for one hour.

You can also divide the batter in half to make two smaller loaves - bake these for only 40 min.
