2 1/2 cups flour
2 tsp baking powder
1/2 tsp salt
1/4 tsp baking soda

1/2 cup butter
1 Tbsp grated orange rind
1 1/2 cups sugar
4 unbeaten egg whites (save yolks for filling)

3/4 c water
1/4 cup orange juice

Filling:
1 cup sugar
1/4 cup corn starch
1/2 tsp salt
4 slightly beaten egg yolks
1/2 cup orange juice
1/2 cup water
1/2 cup butter
1 Tbsp grated orange rind

1 cup coconut
Cool Whip



Directions:

Preheat oven to 375º.

Combine flour, baking powder, salt, and baking soda.

Cream butter, orange rind, and sugar. Blend in the 4 egg whites one at a time, beating well.

Combine orange juice and water.

With electric mixer, alternately add dry mixture and orange juice to the butter mixture. (Begin and end with dry)

Pour into 2- 8 inch round pans, well-greased and floured.

Bake for 25-30 minutes. Cool.

Split layers to make 4 layers. Spread filling (see below) between layers and on top. Sprinkle with coconut. Frost sides with cool whip.

To make filling:
Combine first 6 ingredients in small pan and cook until bubbly. Remove from heat and add butter and orange rind. Cool.

This was my birthday cake that my Nana made every year growing up. I still haven't been able to make it as good as she but I will keep trying.
