Baked Oatmeal Recipe

3 c rolled oats (not quick cooking)
c brown sugar
2 tsp baking powder
tsp salt
2 eggs
1 c unsweetened applesauce
1 c milk
3 Tbsp butter, melted
1 tsp vanilla

Grease muffin tin. In a large mixing bowl combine oats, brown sugar, baking powder and salt. In a separate bowl, combine eggs, applesauce, milk, and vanilla; whisk thoroughly. Pour wet ingredients into dry ones and mix. Scoop batter into prepared muffin tin. Bake at 375 for 30 minutes.

Top with-
cranberries and pistachios
blueberries and shredded coconut
chocolate chips and almonds
