2-1/2 pounds leftover bone & skin chicken pieces (legs, wings, necks, etc.)
2 celery ribs with leaves, cut into chunks
2 medium carrots, cut into chunks
2 medium onions, quartered
2 bay leaves
Dash of black pepper
8 cups cold water

Directions:
Directions:
Place all ingredients in a Dutch oven. Slowly bring to a boil; reduce heat until mixture is just at a simmer. Simmer, uncovered, for 2 hours, skimming foam as necessary.
Strain broth, discarding bones, meat, vegetables and bay leaves. Refrigerate or freeze broth. Skim fat from surface before using.
