45 oz. canned black-eyed peas, drained
c red onion, chopped
3 Tbsp of each- green, red, yellow and orange peppers, chopped
c chopped tomatoes
c olive oil
2 Tbsp sugar
c balsamic vinegar
salt and pepper to taste

Directions:

Mix all ingredients and chill. Serve with chips or crackers.
