Directions:Boil chicken and debone. Mix soups, Rotel, Velveeta, green chilis, bell pepper, onion, black beans and corn if using this option and broth. Start and end with Doritos in large casserole dish. Then layer the chicken and soup mixtures then Doritos until all is gone. Ending with Doritos. Sprinkle Cheddar Cheese or layer cheese slices on top of Doritos and then black olives. Bake at 350º for 35 minutes. (Optional cover with sour cream and bake another 10 minutes.) Note: The last time I made this, I mixed all of this together using the chicken, diced Rotel, onion, 2 pounds white Velvetta cheese cut in medium sized pieces, 1 can black beans rinsed until clear, drained can of corn and about ⅓ bag of South of the Border chips. I topped it all with slices of Cheddar cheese. This makes a large 9x13 pan full. I think it was a hit; it was all eaten! |
