1 boiled fryer or rotisserie chicken (skin removed and deboned) shred or chop chicken. ½ cup Chicken broth
1 can undiluted cream of chicken soup
1 can undiluted cream of mushroom soup
1 can of diced Rotel
1 can green chili peppers chopped (optional)
1 package of Taco flavored Dorito chips
1 medium onion chopped
½ chopped bell pepper
¾ pound grated Velveeta Cheese
Grated Cheddar cheese for topping or thick slices of Cheddar Cheese
Optional Black olives
Optional: small carton sour cream
*Option: this is really good added to this casserole,
1 can black beans drained and rinsed, and 1 can of corn.*

Boil chicken and debone. Mix soups, Rotel, Velveeta, green chilis, bell pepper, onion, black beans and corn if using this option and broth. Start and end with Doritos in large casserole dish. Then layer the chicken and soup mixtures then Doritos until all is gone. Ending with Doritos. Sprinkle Cheddar Cheese or layer cheese slices on top of Doritos and then black olives. Bake at 350º for 35 minutes. (Optional cover with sour cream and bake another 10 minutes.)
Note: The last time I made this, I mixed all of this together using the chicken, diced Rotel, onion, 2 pounds white Velvetta cheese cut in medium sized pieces, 1 can black beans rinsed until clear, drained can of corn and about ⅓ bag of South of the Border chips. I topped it all with slices of Cheddar cheese. This makes a large 9x13 pan full. I think it was a hit; it was all eaten!
