Chicken
1 1/2 pounds boneless, skinless, chicken breast, trimmed and cut into 1 inch pieces...
1/3 cup extra-virgin olive oil...
2 T minced parsley...
1 t finely grated lemon zest plus 1/4 cup fresh lemon juice, usually 2 lemons will give off that amount of juice...
1 t honey...
1 t dried oregano...
1 green bell pepper quartered, stemmed, seeded, each quarter cut into 4 chunks...
1 medium red onion, ends trimmed, peeled, halved lengthwise, each half cut into 4 chunks...

Tzatziki sauce

1 T fresh lemon juice...
2 small garlic cloves, minced into a paste...
3/4 cup plain Greek yogurt...
1/2 cucumber, peeled, halved lengthwise, seeded and diced fine...
3 T minced fresh mint...
1 T minced fresh parsley...
1/4 t salt..,
4, 8 inch pita breads...

Tzatziki sauce

Whisk lemon juice and garlic together in a small bowl...
Let stand for 10 minutes...
Stir in yogurt, cucumber,mint, parsley, and salt,
Cover and set aside...

Chicken

Dissolve 2 T salt in 1 quart of cold water, submerge chicken in brine, cover, and refrigerate for 30 minutes...
While the chicken is brining, combine oil, parsley, lemon zest and juice, honey, oregano, and 1/2 t pepper in a medium bowl...
Transfer 1/4 cup of oil mixture to a large bowl and set aside to toss with cooked chicken...
Remove chicken from brine and pat dry with paper towels...
Toss chicken with the remaining oil mixture, thread 4 pieces of bell pepper, concave side up, onto a skewer, thread 1/4 of chicken onto skewer and finish up with 2 chunks of onion on skewer and place on a plate...
Continue with rest of vegetables and chicken until completed for 4 people...

I use bamboo skewers, soaked for 1 hour in water...
I also use 2 skewers per serving...

Grilling chicken

Gas grill
Turn on all burners, cover, and heat grill for 15 minutes...
Leave primary burner on, turn all others off at 15 minutes...
Place skewers of chicken over high burner, cook, turning occasionally, until chicken is done...
Chicken should read 160 degrees on thermometer...
Takes 15 minutes, at least, keep turning chicken, do not let it burn, just blackened a bit...
Remove and take vegetables and chicken off skewers, place chicken and vegetables in remaining oil mixture and toss gently..
Be sure to break up the onions, cover with foil and let it rest 10 minutes..

Pita breads

Moisten 2 pitas with a splash of water, place these between the other 2 pita breads..
Place on foil, fold up tightly, place on cooler side of grill, keep there during resting of cooked chicken..

Can place chicken and veggies on pita, add sauce and chow down or place chicken on individual plates and eat with pita...
Me, I like the folded pita with chicken and veggies inside with lots of sauce...

Be sure to make sauce first, so flavors meld together...
Can use a charcoal grill, also, just keep one side cooler...
Goes well with a cold beer and Greek salad, real Greek salad!
