Chicken breast (one per person)
Dijon Vinaigrette

4 tbsp. Dijon mustard
3 tbsp. red wine vinegar
1 tbsp. white wine vinegar
tsp salt
1-2 cloves garlic
tsp. basil
⅛ tsp. black pepper
2 drops hot sauce
1 tbsp. grated onion
12 tbsp. safflower oil

Dijon Vinaigrette:
1. Combine mustard and vinegar in blender.
2. Add salt, garlic, basil, black pepper, hot sauce and onion; whirl.
3. With machine running, add oil, one tbsp. at a time.
4. Chill
5. Keeps for several weeks.
Makes 1 cups.

Dijon Chicken
1. Broil, grill, bake, steam, roast, or poach chicken.
2. Accompany with Dijon Vinaigrette for dipping.
