3/4 C sugar
2 large eggs
1 T apricot jam, chopped finely
5 oz flour
1 t baking soda
1/2 t salt
1 T butter
1 t vinegar
1/3 C milk

3/4 C cream
3 1/2 oz butter
5 oz sugar
1/3 C hot water
1 t vanilla essence

Directions:
Directions:
Preheat oven to 350 Degrees. Beat sugar and eggs until thick and lemon colored. Add apricot jelly and mix thoroughly.

Mix flour, soda, and salt.

Melt butter (do not boil), and add vinegar. Add the milk, then add this mixture to the egg mixture and mix thoroughly. Mix flour mixture 1/3 at a time until fully combined.

Pour into an oven proof dish and bake for 45 to 50 minutes.

While the pudding is baking, melt together the second set of ingredients for the sauce. When the cake is halfway baked (about 25 minutes), take it out of the oven, poke holes all over the cake, and pour the sauce over the cake, soaking it.

Return to the oven and continue baking.

I've had to bake it as long as 30 minutes longer in order to get the center of the cake set. It will be lightly browned and only slightly jiggly.

We found this at a restaurant in Broadripple, IN, Zest, which has sadly closed. :( It immediatly became one of our favorite desserts!

The desert is a South African desert. It's called pudding, but it's more of a consistency like Plum Pudding. Serve it with a large dallop of fresh whipped cream!
