8 soft boiled eggs

(you can use hard boiled eggs, but if you use very soft boiled eggs the final product will have a slightly runny center! Delicious!)

1/4 C flour
1 lb pork sausage
3/4 C dry bread crumbs
1/2 t ground sage
1/4 t salt
2 eggs, beaten
Vegetable / Canola oil for frying

Coat eggs with flour. Coat eggs with sausage. I've found the best way to do this is to take a small ball of sausage and flatten it in your hand. You want to make it pretty thin, around 1/4 inch thick. Wrap the "sheet" of sausage around the egg tightly, pinching it together. Make sure the egg is completely covered with the sausage. This is the hardest part of this recipe. It gets easier with practice.

Mix the breadcrumbs with sage and salt. Dip the sausage coated eggs into the beaten eggs, then coat with the breadcrumb mixture. Fry the eggs in hot oil (350 degrees F) until golden brown, 5 to 6 minutes. Place on paper towel lined plate. Serve immediately.

The first time we had these were in a pub in Royal Oak, Michigan. We thought they were so good, and interesting, that I started making them. They are one of our favorite appetizers, or have a couple with a salad for a meal. They are pretty large!
