1 T. Butter
6 med-lg leeks diced
1-2 T. Olive oil
12 lg eggs
3 1/2 c. Almond milk
Salt and fresh ground pepper
3/4 lb grated cheese I use manchego and pecorino romano
10 oz cooked ham dice small

Directions:
Directions:
Oven 350
Spray 9 X 13 in baking dish.
Lg skillet over med heat add butter and olive oil. Add leeks, season generously with salt (1 t.) and pepper. Cook, stir, until tender and just starting to brown, about 10-15 min.
Beat eggs with another t. Salt and add pepper. Whisk in milk.
Assemble 1/3 of cheese in dish, 1/2 each of leeks and ham, next 1/3 cheese, remaining leeks and ham. Pour eggs over and sprinkle remaining cheese over.
Bake until gently set in center or temp 165 to 170. Begin check at 55 min.
Cool on rack 10 min.
