Chicken Cacciatora Recipe

Salad oil
3 lbs. chicken pieces
lb. prosciutto ham, diced
2 onions, chopped
1 (4.5 ounce) can of mushrooms, drained
1 lb. can tomatoes
1 tbsp. chopped parsley
1 tsp. dried basil
1 tsp. salt.
dash of pepper
⅓ cup red wine (Burgundy, not Rose)

1. Cover bottom of frying pan with oil; heat.
2. Brown chicken; remove from pan.
3. Add onions, and mushrooms and cook until onions are transparent.
4. Return chicken to pan; add ham, seasonings, canned tomatoes, and wine.
5. Cover and let it all sit in the pan soaking with the heat off for hour if not longer.
6. Simmer until tender (about 35 minutes)
