Salad oil
3 lbs. chicken pieces
¼ lb. prosciutto ham, diced
2 onions, chopped
1 (4.5 ounce) can of mushrooms, drained
1 lb. can tomatoes
1 tbsp. chopped parsley
1 tsp. dried basil
1 tsp. salt.
dash of pepper
⅓ cup red wine (Burgundy, not Rose)

Directions:
Directions:
1. Cover bottom of frying pan with oil; heat.
2. Brown chicken; remove from pan.
3. Add onions, and mushrooms and cook until onions are transparent.
4. Return chicken to pan; add ham, seasonings, canned tomatoes, and wine.
5. Cover and let it all sit in the pan soaking with the heat off for ½ hour if not longer.
6. Simmer until tender (about 35 minutes)
